- Prepare the Noodles: Cook the rice noodles or Lo Mein noodles according to the package instructions until tender but still firm. Drain and rinse under cold water.
- Marinate the Chicken: Slice the chicken thinly, then marinate in a mixing bowl with cornstarch and soy sauce for about 10 minutes.
- Whisk the Sauce: In a separate bowl, whisk together soy sauce, honey or maple syrup, rice vinegar, hoisin sauce (if using), and sriracha until well combined.
- Cook the Chicken: Heat a pan over medium-high heat, add oil, and cook the marinated chicken for about 5-7 minutes until browned and cooked through. Remove from the pan.
- Sauté the Garlic: Lower heat, add more oil if needed, and sauté minced garlic for about 30 seconds until fragrant.
- Cook the Vegetables: Add red bell pepper and carrots to the pan and stir-fry for 2-3 minutes until tender but still vibrant.
