Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup fresh spinach chopped
  • ½ cup cream cheese
  • ¼ cup shredded mozzarella
  • 2 tablespoons grated parmesan
  • 1 clove garlic minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Method
 

  1. Preheat oven to 375°F
  2. In a bowl, mix spinach, cream cheese, mozzarella, parmesan, garlic, salt, and pepper
  3. Cut a pocket into each chicken breast and stuff with filling
  4. Heat olive oil in a skillet and sear chicken on both sides until golden
  5. Transfer to a baking dish and bake for 20–25 minutes or until cooked through
