Method
- Preheat oven to 375°F
- In a bowl, mix spinach, cream cheese, mozzarella, parmesan, garlic, salt, and pepper
- Cut a pocket into each chicken breast and stuff with filling
- Heat olive oil in a skillet and sear chicken on both sides until golden
- Transfer to a baking dish and bake for 20–25 minutes or until cooked through

- Use toothpicks to secure the filling
- Add sun-dried tomatoes or mushrooms for flavor
- Pairs well with roasted vegetables or rice
