  1. Preheat your oven to 400°F (200°C) and prepare a skillet.
  2. Add olive oil and unsalted butter to the skillet over medium heat; melt completely.
  3. Gently add cherry tomatoes to the skillet and cook for 5-7 minutes until they soften.
  4. Sprinkle in sea salt, fresh cracked black pepper, and drizzled with balsamic vinegar. Cook for another 2-3 minutes.
  5. Roll out puff pastry on a floured surface and drape it over the tomatoes, tucking edges down.
