  • 1 cup Mini Heirloom Tomatoes Cherry or grape tomatoes can be used
  • 1 tablespoon Olive Oil For drizzling before baking

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice the thawed puff pastry into 9 equal rectangles and lightly score a border around each one.
  3. In a mixing bowl, combine ricotta, Parmigiano-Reggiano, salt, black pepper, basil, garlic powder, and oregano until creamy.
  4. Spread cheese filling onto each pastry rectangle, top with halved heirloom tomatoes, drizzle with olive oil, and brush edges with egg.
  5. Bake in the preheated oven for approximately 20 minutes, turning halfway through for even baking.
  6. Cool for a few minutes, sprinkle with flaky sea salt, garnish with basil, and serve.
