Ingredients
  

  • 1 lb boneless skinless chicken breast (cut into thin strips)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 3 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1/2 cup scallions sliced into 2-inch pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • 2 tablespoons water
  • 1/2 teaspoon red pepper flakes optional

Method
 

  1. Prepare the Chicken: Season the chicken strips with salt, pepper, and cornstarch, tossing to coat evenly.
  2. Heat the Pan: In a large skillet or wok, heat vegetable oil over medium-high heat. Add the chicken and cook for 4-5 minutes until golden brown. Remove from the pan and set aside.
  3. Sauté Aromatics: In the same pan, add garlic, ginger, and scallions. Stir-fry for 30 seconds until fragrant.
  4. Make the Sauce: In a small bowl, mix soy sauce, oyster sauce, sesame oil, sugar, and water. Pour the sauce into the pan and stir well.
  5. Combine & Cook: Return the chicken to the pan, tossing everything together. Cook for another 3-4 minutes until the sauce thickens and coats the chicken evenly.
  6. Serve: Transfer to a plate and enjoy hot with rice or noodles.
