- Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper or a silicone mat.
- In a medium bowl, combine the cooked shredded chicken with your choice of BBQ sauce. Stir until coated evenly.
- Spread half of the tortilla chips on the baking sheet, then add half of the BBQ chicken mixture, followed by half of the cheese.
- Layer the remaining tortilla chips on top, followed by the rest of the BBQ chicken and cheese.
- Sprinkle chopped red onion and jalapenos on top of your nachos.
- Bake for about 11–13 minutes, until cheese is bubbly and slightly golden.
- Remove from oven, drizzle with queso blanco and add more BBQ sauce if desired, then bake for an additional 3–4 minutes.
- Garnish with chopped cilantro and serve immediately.
