Ingredients
  

  • 1 lb shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups cooked jasmine or sushi rice
  • 1 avocado sliced
  • 1 cup shredded carrots
  • 1 cucumber thinly sliced
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha
  • 1 teaspoon sesame oil
  • Green onions and sesame seeds for garnish

Method
 

  1. Heat olive oil in a skillet over medium heat
  2. Season shrimp with paprika, salt, and pepper, then sauté until pink and cooked through
  3. In a small bowl, mix mayonnaise, sriracha, and sesame oil to make spicy mayo
  4. Assemble bowls with rice, shrimp, avocado, carrots, and cucumber
  5. Drizzle spicy mayo over the top and garnish with green onions and sesame seeds
