Step‑by‑Step Instructions
  1. Start by seasoning the shrimp with salt and pepper, set aside.
  2. In a bowl, mix dark soy sauce, oyster sauce, mirin, brown sugar, and optional gochugaru.
  3. Soak frozen udon noodles in hot water for 1 minute, then drain and rinse.
  4. Heat cooking oil in a wok over medium heat, sauté the shrimp until pink.
  5. In the same wok, sauté sliced onion and minced garlic until fragrant.
  6. Add chopped cabbage, julienned carrot, and sliced mushrooms, stir-fry until tender.
  7. Return shrimp to wok, add udon noodles and sauce, toss together until heated.
