- In a mixing bowl, combine beef strips with soy sauce and cornstarch. Allow to marinate for about 15 minutes.
- Heat oil in a large wok over medium-high heat. Add sliced onions and sauté for 3–4 minutes until soft.
- Increase heat to high, add marinated beef strips in a single layer, and sear for 3–4 minutes until browned.
- Stir in minced garlic and freshly grated ginger, cooking for 1–2 minutes until fragrant.
- Pour in the remaining soy sauce and oyster sauce, mixing well. Simmer for about 2 minutes.
- Add sliced bell peppers to the wok and stir-fry for an additional 2–3 minutes until tender yet crisp.
- Remove from heat and serve immediately over rice or noodles.
