  1. Prep the Chicken: Allow chicken thighs to sit at room temperature for 20-25 minutes. Prepare spice rub and season chicken.
  2. Sear the Chicken: Heat olive oil and half the butter in a skillet. Sear chicken for 4-5 minutes per side until golden brown and cooked through.
  3. Cook Vegetables: Slice red onion and apples into wedges, measure out apple cider and Dijon mustard.
  4. Make Pan Sauce: Deglaze skillet with apple cider, add remaining butter and mustard, cook onions, then stir in apples and remaining cider. Simmer until thickened.
