- Season chicken thighs with salt, coriander, cinnamon, nutmeg, thyme, and black pepper. Let sit for 10 minutes.
 - Heat oil in a large skillet over medium heat. Sear chicken for about 5 minutes on each side until golden brown.
 - Melt butter in the same skillet, then add brown sugar, sliced apples, and shallots. Cook for 5 minutes until apples soften.
 - Pour in the apple cider, scraping the skillet, and cook for about 5 minutes until it reduces and thickens.
 - Nestle chicken back into the skillet and cook for an additional 2 minutes until flavors meld.
 - Plate the chicken and spoon sauce and apples over the top. Garnish with fresh thyme or rosemary.
