Steps
- Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
- Season 1 pound of chicken with salt and pepper. Sear in the skillet for 5-7 minutes until golden brown, flip and cook for 3-5 minutes more.
- Remove chicken, add 1 chopped onion and 3 minced garlic cloves, sauté for 3-4 minutes until onion is translucent.
- Pour in 1 cup of cranberry sauce and 1/2 cup of orange juice, stir and let simmer for 2-3 minutes.
- Return chicken to the skillet to coat with sauce, cover and simmer for 15-20 minutes.
- Add red pepper flakes if desired and simmer for another minute.
- Serve the chicken warm, spooning sauce over it.
