Slow Cooker Black Bean Burritos are easy and delicious!

These crockpot black bean burritos and rice are a budget-friendly, protein-packed meal with bold Mexican flavors and easy hands-off prep.

Ingredients
  

  • Black beans drained and rinsed
  • Uncooked long-grain rice
  • Diced tomatoes with green chilies
  • Vegetable broth
  • Corn kernels
  • Onion chopped
  • Taco seasoning
  • Salt
  • Flour tortillas
  • Shredded cheese
  • Sour cream or salsa optional for serving

Method
 

  1. Add beans, rice, tomatoes, broth, corn, onion, seasoning, and salt to the crockpot.
  2. Stir and cover.
  3. Cook on low for 4–5 hours until rice is tender.
  4. Scoop mixture into tortillas, add cheese, and roll up into burritos.
  5. Serve with salsa or sour cream.

Notes

  • Use brown rice for added fiber or top with avocado for creaminess. Can be made into a burrito bowl too!
