- Preheat a cast-iron skillet or griddle over medium-high heat for about 5 minutes until hot.
 - Press seasoned ground beef onto one side of each tortilla, smashing it down firmly.
 - Place tortilla beef-side down on the hot skillet and cook for 2-3 minutes until beef is browned.
 - Flip the tortilla, sprinkle with cheese, and fold in half. Grill for 1-2 minutes on each side until cheese melts.
 - Remove from skillet and let rest for a minute before slicing into triangles.
