Prep Time 15 minutes
Total Time 2 hours 15 minutes
Servings: 90 -100 mints
Course: Dessert
Cuisine: American

Ingredients

  • 8 oz cream cheese softened
  • ¼ cup unsalted butter softened
  • 2 pounds about 7 ½ cups powdered sugar, divided
  • 1 ½ teaspoons pure mint extract
  • Gel food coloring optional

Method

  1. In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
  2. Gradually add 4 cups of powdered sugar, mixing well after each addition until fully incorporated.
  3. Stir in the mint extract and mix until combined.
  4. Gradually add the remaining powdered sugar, continuing to mix until a stiff dough forms. If the dough is sticky, add more powdered sugar, one tablespoon at a time.
  5. If using food coloring, divide the dough into portions and knead in a few drops of color until evenly mixed.
  6. Roll the dough into small balls (about 1 teaspoon each) and place them on a parchment-lined baking sheet.
  7. Use a fork dipped in powdered sugar to gently press each ball, creating a decorative pattern.
  8. Allow the mints to air dry at room temperature for at least 2 hours, or until firm.
  9. Once set, store the mints in an airtight container in the refrigerator or freezer until ready to serve.

Notes

  • Ensure the cream cheese and butter are at room temperature for a smooth consistency.
  • If the dough is too sticky, gradually add more powdered sugar until manageable.
  • For a festive touch, roll the mints in sanding sugar or dip them in melted chocolate.
  • Store in an airtight container in the fridge for up to two weeks or freeze for up to two months.
