- Blend watermelon chunks in a blender on high until smooth, yielding about 2 cups of juice.
- Strain the blended mixture through a fine mesh sieve into a bowl, discarding solids.
- In a saucepan, measure and pour 1 cup of the juice. Bloom gelatin by sprinkling over the remaining juice for 5-10 minutes.
- Warm the saucepan with watermelon juice over low to medium heat for 3-5 minutes without boiling.
- Remove from heat and whisk in the bloomed gelatin until completely dissolved.
- Stir in lemon juice and honey, mixing well to combine flavors.
- Pour the mixture into molds or a greased dish, refrigerate for at least 2 hours until set.
