Step-by-Step Instructions
  1. Blend watermelon chunks in a blender on high until smooth, yielding about 2 cups of juice.
  2. Strain the blended mixture through a fine mesh sieve into a bowl, discarding solids.
  3. In a saucepan, measure and pour 1 cup of the juice. Bloom gelatin by sprinkling over the remaining juice for 5-10 minutes.
  4. Warm the saucepan with watermelon juice over low to medium heat for 3-5 minutes without boiling.
  5. Remove from heat and whisk in the bloomed gelatin until completely dissolved.
  6. Stir in lemon juice and honey, mixing well to combine flavors.
  7. Pour the mixture into molds or a greased dish, refrigerate for at least 2 hours until set.
  8. Remove gummies from molds or cut from the dish into desired shapes, and store in an airtight container.
