In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and season with garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
Add the cherry tomatoes to the skillet and cook for an additional 2-3 minutes until they start to soften.
Stir in the fresh spinach and cook until wilted, about 1-2 minutes.
Reduce the heat to low and pour in the heavy cream, stirring to combine. Allow the mixture to simmer for 2-3 minutes until slightly thickened.
Sprinkle the shredded cheddar cheese over the top and cover the skillet. Let it sit for 2-3 minutes until the cheese is melted.
Remove from heat and garnish with fresh parsley before serving.
