Ingredients
  

  • 4 cups sliced yellow squash
  • 1 small onion chopped
  • 2 tablespoons butter
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 egg beaten
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup crushed buttery crackers like Ritz
  • 2 tablespoons melted butter for topping

Method
 

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, sauté squash and onion in butter until tender.
  3. In a bowl, combine sour cream, cheese, egg, garlic powder, salt, and pepper.
  4. Stir in cooked squash mixture.
  5. Pour into a greased baking dish.
  6. Mix cracker crumbs with melted butter and sprinkle on top.
  7. Bake for 25–30 minutes or until golden and bubbly.

Notes

  • Use zucchini in place of yellow squash if desired.
  • Add a pinch of cayenne for heat.
  • Great make-ahead dish—just bake before serving.
