Method
- Preheat oven to 350°F (175°C).
- In a skillet, sauté squash and onion in butter until tender.
- In a bowl, combine sour cream, cheese, egg, garlic powder, salt, and pepper.
- Stir in cooked squash mixture.
- Pour into a greased baking dish.
- Mix cracker crumbs with melted butter and sprinkle on top.
- Bake for 25–30 minutes or until golden and bubbly.
Notes
- Use zucchini in place of yellow squash if desired.
- Add a pinch of cayenne for heat.
- Great make-ahead dish—just bake before serving.
