- Preheat oven to 350°F.
- In a skillet over medium heat, melt 2 tablespoons butter. Add squash and onion, cooking until tender, about 8–10 minutes. Drain any excess liquid.
- In a large bowl, combine cooked squash mixture, cheddar cheese, sour cream, salt, pepper, and beaten egg. Mix until well combined.
- Transfer mixture to a greased 8x8-inch baking dish.
- Top with crushed crackers and drizzle with melted butter.
- Bake for 25–30 minutes, until golden brown and bubbly.
Notes
- For a deeper flavor, add a pinch of garlic powder or a dash of hot sauce. Use Ritz crackers for a rich, buttery topping.
