Ingredients
  

  • 1 pound boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 1 tablespoon hot sauce adjust to taste
  • 8 slider buns
  • 1 cup shredded lettuce
  • 1 medium tomato sliced
  • Pickles optional

Method
 

  1. In a small bowl, combine the smoked paprika, garlic powder, onion powder, cayenne pepper, oregano, salt, and black pepper to create the spice mix.
  2. Pat the chicken thighs dry with paper towels. Rub the olive oil over the chicken, then coat both sides with the spice mix, ensuring an even layer.
  3. Heat a large skillet over medium-high heat. Once hot, add the seasoned chicken thighs and cook for about 5-7 minutes per side, or until the chicken is cooked through and has a nice char. The internal temperature should reach 165°F.
  4. While the chicken is cooking, mix the mayonnaise and hot sauce in a small bowl. Adjust the hot sauce to your preferred spice level.
  5. Once the chicken is done, remove it from the skillet and let it rest for a few minutes. Slice the chicken into smaller pieces to fit the slider buns.
  6. To assemble the sliders, spread the spicy mayo on the bottom half of each slider bun. Add a piece of chicken, top with shredded lettuce, a slice of tomato, and pickles if desired. Place the top half of the bun on each slider.
  7. Serve immediately and enjoy your spicy blackened chicken sliders!
