Method
Cook the Sausage:
- Heat olive oil in a large skillet over medium-high heat.
- Add the sliced sausage and cook for 3-4 minutes until browned.
- Remove the sausage from the skillet and set aside.
Sauté the Vegetables:
- In the same skillet, add the chopped onions and diced bell peppers.
- Sauté for 3 minutes until they begin to soften.
- Stir in the minced garlic and cook for another minute until fragrant.
Add the Rice and Seasonings:
- Stir in the uncooked rice and let it toast for about 1 minute.
- Add Cajun seasoning, paprika, dried thyme, salt, and black pepper.
Simmer Everything Together:
- Pour in the chicken broth and diced tomatoes with their juices.
- Stir well and bring the mixture to a light boil.
- Reduce the heat to low, cover, and let it simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
Finish and Serve:
- Return the cooked sausage to the skillet and stir to combine.
- Cook for another 3 minutes to allow the flavors to meld.
- Garnish with chopped green onions and parsley.
- Serve hot and enjoy!
Notes
- For extra spice, add a pinch of cayenne pepper or a few dashes of hot sauce.
- Brown rice can be used, but it will require an additional 15-20 minutes of cooking time.
- To make it creamy, stir in ½ cup of heavy cream before serving.
- Store leftovers in an airtight container in the fridge for up to 4 days.
- Reheat on the stovetop with a splash of broth to keep the rice moist.
