Ingredients
  

For the Cajun Sausage and Rice Skillet:
  • 12 oz smoked sausage Andouille or Kielbasa, sliced
  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 1 cup diced bell peppers red and green
  • 2 cloves garlic minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can 14.5 oz diced tomatoes (with juices)
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup chopped green onions for garnish
  • 2 tablespoons fresh parsley chopped (optional)

Method
 

Cook the Sausage:
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the sliced sausage and cook for 3-4 minutes until browned.
  3. Remove the sausage from the skillet and set aside.
Sauté the Vegetables:
  1. In the same skillet, add the chopped onions and diced bell peppers.
  2. Sauté for 3 minutes until they begin to soften.
  3. Stir in the minced garlic and cook for another minute until fragrant.
Add the Rice and Seasonings:
  1. Stir in the uncooked rice and let it toast for about 1 minute.
  2. Add Cajun seasoning, paprika, dried thyme, salt, and black pepper.
Simmer Everything Together:
  1. Pour in the chicken broth and diced tomatoes with their juices.
  2. Stir well and bring the mixture to a light boil.
  3. Reduce the heat to low, cover, and let it simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
Finish and Serve:
  1. Return the cooked sausage to the skillet and stir to combine.
  2. Cook for another 3 minutes to allow the flavors to meld.
  3. Garnish with chopped green onions and parsley.
  4. Serve hot and enjoy!

Notes

  • For extra spice, add a pinch of cayenne pepper or a few dashes of hot sauce.
  • Brown rice can be used, but it will require an additional 15-20 minutes of cooking time.
  • To make it creamy, stir in ½ cup of heavy cream before serving.
  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • Reheat on the stovetop with a splash of broth to keep the rice moist.
