Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese cheddar or Mexican blend
  • 1/4 cup sour cream
  • 1 ripe avocado
  • 1/4 cup Greek yogurt
  • 2 tablespoons lime juice
  • 1 clove garlic minced
  • Salt to taste

Method
 

  1. In a skillet, heat olive oil over medium heat. Add the shredded chicken, chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper. Stir to combine and cook for about 5 minutes, until heated through.
  2. While the chicken is cooking, prepare the Avocado Lime Sauce. In a blender or food processor, combine the avocado, Greek yogurt, lime juice, minced garlic, and salt. Blend until smooth and creamy. Adjust seasoning if needed.
  3. Warm the tortillas in a dry skillet or microwave until pliable.
  4. To assemble the tacos, place a portion of the spiced chicken on each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream.
  5. Drizzle the Avocado Lime Sauce over the top of each taco. Serve immediately.
