  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon chili garlic sauce
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh chives for garnish
  • 1 teaspoon smoked paprika for garnish

Method

  1. Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium-high heat.

  4. Peel the eggs under running water for easier removal of the shells.
  5. Slice the eggs in half lengthwise and carefully remove the yolks, placing them in a mixing bowl.

  7. Spoon or pipe the yolk mixture back into the egg whites.
  8. Sprinkle the filled eggs with smoked paprika and garnish with chopped chives.
  9. Serve immediately or refrigerate for up to 2 hours before serving.
