  • 2 tablespoons sesame seeds for garnish

  • 2 tablespoons rice vinegar or white wine vinegar
  • 2 tablespoons sesame oil or chili oil for spice
  • 1 tablespoon honey or maple syrup for vegan option
  • 2 cloves garlic fresh minced
  • 1 teaspoon crushed red pepper flakes for spiciness

Method
 

Preparation Steps
  1. Wash and dry the cucumbers; cut off ends and spiral cut using chopsticks.
  2. Cut the spiraled cucumbers in half and place in a large bowl.
  3. In a small bowl, whisk together soy sauce, vinegar, sesame oil, honey or maple syrup, garlic, and red pepper flakes.
  4. Pour dressing over cucumbers and gently toss to coat.
  5. Sprinkle green onions and sesame seeds on top.
