Ingredients
  

For the Slaw
  • 1 cup jicama peeled and julienned
  • 1 cup mango ripe and diced
  • 1/4 cup cilantro chopped
  • 2 tablespoons lime juice freshly squeezed
  • 1 medium jalapeño diced, optional for heat
  • 1 medium red bell pepper diced
  • 1/2 medium red onion thinly sliced
For the Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon honey or agave nectar
  • 1/2 teaspoon cumin optional
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Peel the jicama and cut it into thin julienne strips for crunch.
  2. Dice the ripe mango into bite-sized pieces.
  3. Chop the fresh cilantro, slice the red onion thinly, and dice the red bell pepper.
  4. Set all prepared ingredients aside in a large mixing bowl.
Dressing
  1. In a small mixing bowl, whisk together the lime juice and olive oil.
  2. Add honey (or agave nectar), salt, and pepper to taste.
  3. If desired, sprinkle in cumin and whisk until emulsified.
Combining Ingredients
  1. In the large bowl with chopped vegetables and fruits, add the diced jalapeño and the dressing.
  2. Gently toss all ingredients together until evenly coated.
Chilling
  1. Cover the mixing bowl with plastic wrap and refrigerate for at least 30 minutes.
  2. Toss before serving if desired.
