Preparation
- Peel the jicama and cut it into thin julienne strips for crunch.
- Dice the ripe mango into bite-sized pieces.

Dressing
- In a small mixing bowl, whisk together the lime juice and olive oil.
- Add honey (or agave nectar), salt, and pepper to taste.
- If desired, sprinkle in cumin and whisk until emulsified.
Combining Ingredients
- In the large bowl with chopped vegetables and fruits, add the diced jalapeño and the dressing.
- Gently toss all ingredients together until evenly coated.
Chilling
- Cover the mixing bowl with plastic wrap and refrigerate for at least 30 minutes.
- Toss before serving if desired.
