  • 1 teaspoon chili powder adjust to taste
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper optional, for heat
  • Optional toppings: fresh cilantro crumbled queso fresco, or extra chili powder

Method
 

  1. Make the Creamy Base
  2. In a large mixing bowl, combine 1/4 cup mayonnaise, 1/4 cup sour cream, and 1 tablespoon fresh lime juice. Stir until smooth and creamy.

  4. Mix in 2 cups of corn kernels, ensuring every kernel is coated in the creamy mixture.
  5. Season the Mixture
