Ingredients

  • 1 lb ground turkey or beef/chicken
  • 1 cup fresh spinach finely chopped
  • 2 cloves garlic minced
  • ½ cup breadcrumbs
  • 1 egg
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp Italian seasoning
  • ½ cup shredded Parmesan cheese
  • 1 tbsp olive oil for cooking
  • 4 oz mozzarella cheese cut into small cubes
For the Sauce:
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • cups marinara sauce
  • ½ tsp red pepper flakes optional

Method

  1. Prepare the Meatballs: In a bowl, mix ground turkey, spinach, garlic, breadcrumbs, egg, salt, pepper, Italian seasoning, and Parmesan.
  2. Stuff with Mozzarella: Take a small amount of the mixture, flatten it, place a mozzarella cube in the center, and seal the meat around it to form a ball.
  3. Cook the Meatballs: Heat olive oil in a pan over medium heat. Cook the meatballs until browned on all sides and fully cooked (about 8–10 minutes). Remove and set aside.
  4. Make the Sauce: In the same pan, add olive oil and garlic. Sauté for a minute, then pour in marinara sauce and red pepper flakes. Simmer for 5 minutes.
  5. Combine & Serve: Add the meatballs to the sauce and let them simmer for a couple more minutes. Serve with pasta, bread, or on their own!

Notes

  • You can use ground chicken or beef instead of turkey.
  • For extra crispiness, bake the meatballs at 400°F (200°C) for 15–18 minutes.
  • Serve with extra Parmesan and fresh basil for added flavor.
