Spring-Inspired Easter Layer Cake

This Pastel Celebration Cake is a soft, fluffy, and beautifully layered dessert perfect for Easter, birthdays, or any festive occasion. Made with a tender vanilla cake, tinted in pastel hues, and topped with a creamy buttercream frosting, it’s as fun to make as it is to eat. Ingredients
  

For the Cake Layers:
  • 1 15.25-ounce box of white cake mix
  • 2 large eggs
  • 2 large egg whites
  • 1 cup buttermilk
  • ½ cup canola oil
  • ¼ cup sour cream
  • Blue pink, and yellow food coloring
For the Buttercream Frosting:
  • 1 ½ cups unsalted butter room temperature
  • 5 ½ cups powdered sugar
  • 1 tablespoon vanilla extract
  • ½ teaspoon kosher salt
  • 2-4 teaspoons milk if needed
For Garnish:
  • Candy eggs

Method
 

  1. Preheat & Prepare Pans – Preheat the oven to 350°F (175°C). Grease and line three round cake pans.
  2. Mix the Batter – In a large bowl, mix together the cake mix, eggs, egg whites, buttermilk, oil, and sour cream until smooth.
  3. Divide & Color – Separate the batter into three bowls. Tint each with blue, pink, or yellow food coloring, stirring until evenly combined.
  4. Bake the Cake Layers – Pour each colored batter into a prepared cake pan. Bake for 22-25 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
  5. Make the Buttercream – Beat the butter until fluffy. Gradually add powdered sugar, vanilla extract, and salt. If needed, add milk 1 teaspoon at a time until the desired consistency is reached.
  6. Assemble the Cake – Place one cake layer on a serving plate, frost with a layer of buttercream, and repeat with the remaining layers. Spread frosting over the entire cake.
  7. Decorate & Serve – Garnish with candy eggs or sprinkles. Slice and enjoy!

Notes

  • Use gel food coloring for vibrant pastel shades without altering the batter’s consistency.
  • Chill the cake layers before frosting for easier assembly.
  • Store in an airtight container at room temperature for 2 days or in the fridge for up to a week.
  • Swap candy eggs for fresh berries or edible flowers for an elegant touch.
