- Preparation: Preheat your oven to 400°F (200°C) and lightly grease a baking sheet.
- Prepare the Filling: In a medium bowl, combine the thawed and drained spinach, crumbled feta, shredded mozzarella, salt, and pepper. Mix until well combined.
Assemble the Pastries:
- Lay out the puff pastry sheets on a clean surface.
- Brush each sheet with melted butter.
- Evenly spread the spinach and cheese mixture over each pastry sheet.
- Using a sharp knife or pizza cutter, slice each sheet into strips approximately 1 to 1.5 inches wide.
- For each strip, roll both ends towards the center to create a double spiral.
- Place three spirals together on the prepared baking sheet, positioning them to form a shamrock shape. If desired, use a small piece of pastry to create a stem.
- Bake: Brush the assembled shamrocks with the remaining melted butter. Bake for 20-23 minutes, or until the pastries are golden brown and puffed.
- Serve: Allow the pastries to cool slightly before serving. Enjoy them warm as a delightful appetizer or snack.
