For the Steak
  • 1 lb Steak Bites Tender cuts like ribeye or sirloin.
  • 1 tbsp Olive Oil Essential for searing; can use a neutral oil.
For the Sauce
  • 3 tbsp Butter Adds richness.
  • 3 cloves Minced Garlic Fresh preferred.
  • 1 cup Heavy Cream Can substitute with half-and-half or milk.
  • 1 cup Parmesan Cheese Grana Padano or Pecorino Romano can work.
For Seasoning
  • 1 tsp Salt Using kosher salt is recommended.
  • 1 tsp Pepper

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Cook shell pasta according to package instructions until al dente, about 8-10 minutes. Reserve ½ cup of pasta water before draining.
  2. Pat steak bites dry and season with salt and pepper. Heat olive oil in a skillet over medium-high heat. Add steak bites and sear for 2-3 minutes on each side until browned.
  3. Remove steak from skillet and cover with foil to keep warm.
  4. In the same skillet, melt butter and sauté minced garlic for about 1 minute until fragrant.
  5. Pour in heavy cream and simmer for 2-3 minutes. Whisk in Parmesan cheese until melted and smooth. Adjust thickness with reserved pasta water if necessary.
  6. Add drained shell pasta to the skillet and toss to coat in the sauce. Warm together for 1-2 minutes.
  7. Serve pasta on plates topped with steak bites. Drizzle with juices from the steak and garnish with parsley or extra Parmesan if desired.
