- Bring a large pot of salted water to a boil. Cook shell pasta according to package instructions until al dente, about 8-10 minutes. Reserve ½ cup of pasta water before draining.
- Pat steak bites dry and season with salt and pepper. Heat olive oil in a skillet over medium-high heat. Add steak bites and sear for 2-3 minutes on each side until browned.
- Remove steak from skillet and cover with foil to keep warm.
- In the same skillet, melt butter and sauté minced garlic for about 1 minute until fragrant.
- Pour in heavy cream and simmer for 2-3 minutes. Whisk in Parmesan cheese until melted and smooth. Adjust thickness with reserved pasta water if necessary.
- Add drained shell pasta to the skillet and toss to coat in the sauce. Warm together for 1-2 minutes.
- Serve pasta on plates topped with steak bites. Drizzle with juices from the steak and garnish with parsley or extra Parmesan if desired.
