Step-by-Step Instructions
  1. Prepare the Marinade: Dice the chicken breasts into bite-sized pieces. In a bowl, combine chicken with tomato ketchup, garlic, ginger, soy sauce, and sweet chilli sauce. Mix thoroughly and let marinate for 15-30 minutes.
  2. Heat the Pan: Heat sunflower oil in a frying pan over medium-low heat until shimmering.
  3. Cook the Chicken: Add marinated chicken to the pan and cook undisturbed for 4-5 minutes until browned.
  4. Continue Cooking: Turn chicken and cook for an additional 8-10 minutes, stirring occasionally until cooked through.
  5. Thicken the Sauce: Increase heat to high for the last minute to thicken the sauce.
  6. Serve and Enjoy: Serve over sticky or Jasmine rice with optional sweet chilli sauce and sides like broccoli or prawn crackers.
