  • 1 box 15.25 oz strawberry cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/2 cup white chocolate chips
  • 1/2 cup chopped strawberries fresh or frozen, thawed
  • Powdered sugar for dusting optional

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the strawberry cake mix, eggs, and vegetable oil. Mix until well combined and a dough forms.
  3. Gently fold in the white chocolate chips and chopped strawberries until evenly distributed.
  4. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.
  6. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  7. If desired, dust with powdered sugar before serving.
