Ingredients

  • 1/2 cup whipped cream store-bought or homemade
For the Strawberry Coating:
  • 1 cup fresh strawberries pureed

For the Crunch Coating:
  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter

Method
 

Make the Cheesecake Filling:
  1. In a mixing bowl, beat the softened cream cheese until smooth and creamy.
  2. Add the powdered sugar and vanilla extract, mixing until well combined.
  3. Gently fold in the whipped cream to create a fluffy texture. Be careful not to overmix.
  4. Refrigerate the cheesecake filling while preparing the other layers.
Prepare the Strawberry Coating:
  1. Puree fresh strawberries and mix with sugar, adjusting the sweetness to your preference.
  2. Stir in the cornstarch until fully dissolved. Set aside the mixture for coating the cheesecake bites.
Form the Cheesecake Balls:
  1. Take about 1 tablespoon of the cheesecake filling and roll it into a ball using your hands.
  2. Repeat the process until all the filling is used.
  3. Place the cheesecake balls on a tray lined with parchment paper and freeze for 30 minutes to set.
Make the Crunch Coating:
  1. Combine graham cracker crumbs, melted butter, and sugar in a bowl. Mix until the texture resembles wet sand.
Coat the Cheesecake Balls:
  1. Remove the cheesecake balls from the freezer.
  2. Dip each ball into the strawberry coating, ensuring it’s fully covered.
  3. Roll the coated ball in the graham cracker crunch mixture, pressing gently for an even coating.
  4. Return the coated bites to the parchment-lined tray.
Chill and Serve:
  1. Freeze the coated cheesecake bites for at least 1 hour to set.
