Step-by-Step Instructions
  1. In a large pot, heat olive oil over medium heat. Add diced onion, chopped jalapeños, and corn kernels. Season with salt and pepper, cooking for 7–9 minutes until fragrant.
  2. Stir in minced garlic and ground chicken, breaking it apart. Add chili powder, paprika, cumin, and season with salt and pepper. Cook for another 7-9 minutes until chicken is browned.
  3. Pour in chicken broth, stir to combine, raise heat to boil, then reduce to a simmer. Let it simmer uncovered for 25-30 minutes, stirring occasionally.
  4. After simmering, stir in sour cream, chopped cilantro, lime juice, and hot sauce if desired. Simmer for an additional 5-10 minutes on low heat.
  5. Taste and adjust seasonings as needed. Serve warm with toppings like cilantro, lime wedges, or cheese.
