Ingredients

  • 1 lb boneless skinless chicken breast (sliced thinly)
  • 2 cups fresh green beans trimmed
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 teaspoon grated ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon hoisin sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sesame oil optional

Method

  1. Prepare the Chicken: Slice chicken into thin strips and season with a pinch of salt and pepper.
  2. Blanch the Green Beans: Bring a pot of water to a boil, add green beans, and cook for 2 minutes. Drain and set aside.
  3. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a wok or skillet over medium-high heat. Add chicken and cook for 4-5 minutes until golden brown. Remove and set aside.
  4. Stir-fry Aromatics: In the same pan, add the remaining 1 tablespoon of oil. Sauté garlic and ginger for 30 seconds until fragrant.
  5. Add Green Beans & Sauce: Return green beans and chicken to the pan. Stir in soy sauce, oyster sauce, hoisin sauce, rice vinegar, and black pepper.
  6. Thicken the Sauce: Pour in the cornstarch slurry and stir until the sauce thickens, coating the chicken and beans evenly.
  7. Finish & Serve: Drizzle with sesame oil (if using), serve hot over rice, and enjoy!

Notes

  • For extra tenderness, marinate the chicken in 1 teaspoon of soy sauce and cornstarch for 15 minutes before cooking.
  • Swap proteins: This dish works great with shrimp, tofu, or beef.
  • Want it spicier? Add a pinch of red pepper flakes or Sriracha.
