Cook the sausage links according to the package directions and set them aside.
In a large bowl, whisk together the flour, sugar, baking powder, and sea salt.
In a separate bowl, mix the buttermilk, beaten egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir gently until combined. Let the batter sit for 5 minutes.
Heat a non-stick skillet over medium heat and lightly spray with cooking spray.
Scoop about 3 tablespoons of batter onto the skillet for each pancake. Cook for 2–3 minutes until bubbles form on the surface and the bottom turns golden brown. Flip and cook for another 2–3 minutes until golden.
Place a cooked pancake on a plate and add a sausage link in the center. Roll the pancake around the sausage and set it seam-side down.
Repeat with the remaining batter and sausage links.
Serve warm with syrup drizzled on top or on the side for dipping.
