Method
- Preheat oven to 375°F (190°C).
- Season chicken with garlic powder, salt, and pepper.
- Place chicken in a baking dish and top with pineapple chunks and juice.
- Sprinkle brown sugar over the top and drizzle with soy sauce.
- Bake uncovered for 30–35 minutes or until chicken is cooked through and sauce is slightly caramelized.
- Spoon sauce over chicken before serving.
Notes
- You can substitute pineapple tidbits or rings if preferred.
- Great served with coconut rice or roasted vegetables.
