Ingredients
  

  • 1 pound chicken breast sliced thin
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 red bell pepper sliced
  • 1 cup broccoli florets
  • 1/2 cup snap peas
  • 2 cloves garlic minced
  • 1 teaspoon grated ginger

Method
 

  1. Toss sliced chicken with soy sauce and cornstarch; let sit for 10 minutes.
  2. In a small bowl, mix all sauce ingredients until smooth.
  3. Heat oil in a skillet over medium-high heat. Add chicken and cook until browned, 5–6 minutes.
  4. Add garlic, ginger, and vegetables. Stir fry for 3–4 minutes.
  5. Pour in sauce and cook until thickened and everything is coated.
  6. Serve hot over rice or noodles.

Notes

  • You can swap in your favorite vegetables or add chili flakes for heat.
  • Use pre-chopped stir fry mix for quicker prep.
