Preparation
  1. Prepare the coleslaw by whisking together mayonnaise, apple cider vinegar, and sugar until smooth. Add shredded cabbages and carrots, toss well, cover, and chill for 30 minutes.
  2. Make the creamy garlic sauce by combining mayonnaise, sour cream, milk, and minced garlic until smooth. Set aside.
  3. Cook the honey chipotle sauce by heating honey, chipotle peppers, and ketchup in a saucepan over medium-low heat for 3-5 minutes until simmering.
  4. Grill the chicken thighs after pounding them to an even thickness, seasoning with olive oil, salt, and pepper, cooking for about 5-7 minutes per side.
  5. Coat cooked chicken with the honey chipotle sauce in a mixing bowl.
  6. Toast brioche slider buns in a skillet with butter on the cut sides for about 1-2 minutes until golden brown.
  7. Assemble sliders with chicken on the bottom bun, topped with coleslaw and creamy garlic sauce, then cap with the top bun.
