Ingredients
  

For the Ribs
  • 2 lbs Pork Spare Ribs Well-trimmed for maximum flavor.

  • 1 tsp Black Pepper Adjust based on spice preference.
  • 1 tbsp Garlic Powder Fresh garlic is a great substitute.
  • 1 tbsp Ginger Fresh ginger provides a bolder taste.
  • 1/4 cup Lime Juice Can be substituted with lemon juice.
  • 1/2 cup Sweet Chili Sauce Store-bought or homemade.
  • 1 tbsp Fish Sauce Omit for vegetarian option or swap with soy sauce.
  • 1 tbsp Soy Sauce Low-sodium option recommended.

Method
 

Preparation Steps
  1. Trim excess fat from the ribs and remove the membrane for better tenderness. Rinse under cold water and pat dry.
  2. In a bowl, mix brown sugar, salt, black pepper, garlic powder, and ginger. Season ribs generously and marinate in the refrigerator for at least one hour.
  3. Preheat oven to 275°F (135°C). Place seasoned ribs on a lined baking sheet, cover with aluminum foil, and bake for 3 hours.
  4. After 3 hours, remove foil, brush with sweet chili sauce, and broil at 500°F (260°C) for 5-10 minutes until caramelized.
  5. For Instant Pot, add seasoned ribs with 1 cup water. Cook on high pressure for 25-30 minutes and release pressure.
  6. For Slow Cooker, place ribs in the cooker and cook on low for 6-8 hours until tender.
  7. For Grilling, preheat grill to medium and cook ribs indirect for 2-3 hours, brushing with sweet chili sauce in the last 15-20 minutes.
  8. Remove ribs from heat and let them rest before slicing. Serve with extra sweet chili sauce for dipping.
