Preparation Steps
  1. Prepare Corn: Husk the fresh sweet corn and slice off the kernels over a bowl, scraping the cob for excess liquid. Reserve 1/3 cup of kernels for garnish.
  2. Blend Ingredients: In a blender, combine the corn kernels, yellow cherry tomatoes, yellow bell pepper, shallot, garlic, white beans, vegetable stock, and lime juice. Add cayenne pepper, ground ginger, salt, and pepper. Blend until smooth, about 3-4 minutes.
  3. Chill Gazpacho: Transfer the mixture to a bowl or container, cover, and chill in the refrigerator for at least one hour.
  4. Adjust Seasonings: Stir the chilled gazpacho, blend for an additional 30 seconds, and adjust seasonings to taste.
  5. Serve: Ladle the gazpacho into bowls, adding reserved corn kernels, drizzle with olive oil, and garnish with radish sprouts and cilantro leaves.
