- Preheat your oven to 400°F (200°C). Wash and poke holes in the sweet potatoes with a fork. Bake for 40-45 minutes until soft. Cool, peel, and set aside the sweet potato flesh.
- Lower the oven temperature to 350°F (175°C) and butter a 2-quart baking dish. In a mixing bowl, combine the sweet potato flesh, butter, milk, brown sugar, vanilla extract, cinnamon, salt, and eggs. Blend until smooth.
- Hand-mash the remaining sweet potato flesh and mix in the orange zest. Fold this mixture into the smooth casserole blend.
- In a separate bowl, combine marshmallows with flour and a pinch of salt. Set aside.
- Pour the sweet potato mixture into the baking dish and spread evenly. Sprinkle marshmallow topping over it. Bake for 25-30 minutes until marshmallows are golden.
