Ingredients
  

  • 1 pound boneless skinless chicken breasts, thinly sliced
  • 1 tablespoon olive oil
  • 1/2 onion chopped
  • 1 can 15 oz pineapple chunks, drained
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1/4 cup rice vinegar
  • 1 clove garlic minced
  • 1/4 teaspoon red pepper flakes optional

Method
 

  1. Heat the Oil: In a large skillet over medium-high heat, add the olive oil.
  2. Cook the Chicken: Add the sliced chicken and cook for 5-7 minutes, until golden brown and fully cooked. Remove and set aside.
  3. Sauté Aromatics: In the same skillet, add the chopped onion and cook until softened (about 2 minutes). Stir in the minced garlic and cook for another 30 seconds.
  4. Add the Sauce: Stir in the pineapple chunks, soy sauce, honey, rice vinegar, and red pepper flakes. Let it simmer for 2 minutes.
  5. Combine Everything: Return the cooked chicken to the pan, toss to coat, and let it simmer for 5 more minutes until the sauce thickens.
  6. Serve: Remove from heat and serve hot over rice, quinoa, or vegetables.

Notes

    • For a gluten-free version, use gluten-free soy sauce or tamari.
    • Adjust sweetness by reducing honey and adding a squeeze of fresh lime juice.
    • Add bell peppers or snap peas for extra color and crunch.
    • If you prefer a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of water and stir it in while simmering.
