Step-by-Step Instructions for Honey Mocktail
  1. In a small saucepan, combine ½ cup of honey, ¾ cup of still water, and three slices of fresh root ginger. Heat the mixture on medium heat for about 3-4 minutes, stirring gently until the honey is fully dissolved and the syrup starts to simmer. Remove from heat and discard the ginger slices. Let the syrup cool to room temperature.
  2. Take two tumbler glasses and fill each with a generous amount of ice, about halfway full. Carefully pour approximately ½ cup of honey ginger syrup into each glass.
  3. Open a bottle of sparkling water and slowly fill the remaining space in each glass with the fizzy goodness. Gently stir each glass with a cocktail stirrer.
  4. For an extra touch, add a thin slice of fresh ginger or a sprig of mint on top of each mocktail as a garnish. Serve immediately.
