Step‑By‑Step Instructions

  2. In your blender, combine the cottage cheese, rolled oats, egg, honey or maple syrup, vanilla extract, lemon zest, baking powder, and a pinch of salt. Blend for about 1-2 minutes until smooth.
  3. Transfer the mixture to a large mixing bowl and gently fold in the blueberries with a spatula.
  4. Allow the batter to sit for 5 minutes to thicken.
  5. Using a spoon or small ice cream scoop, fill the muffin cups about three-quarters full with the batter.
  6. Bake in the preheated oven for 18-22 minutes until the tops are golden brown and firm to the touch.
  7. Let the bites cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.
