- Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan.
- In a mixing bowl, combine ½ cup of softened butter with ¾ cup of granulated sugar. Beat on medium speed until light and fluffy (2-3 minutes).
- Gradually add 2 cups of all-purpose flour to the creamed mixture. Mix on low speed until just combined.
- Transfer the shortbread mixture into the greased baking pan and press it evenly into the bottom.
- Sprinkle 1 cup of dried cherries and ½ cup of white chocolate chips over the shortbread base, and gently press them in.
- Mix any remaining shortbread mixture with ¼ cup of granulated sugar and melted butter, then sprinkle over the cherries and chocolate.
- Bake for 25-30 minutes until the top is golden brown.
