Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F) and cover a baking sheet with foil.
  2. In a medium skillet, heat olive oil over medium heat, add onion and garlic, cooking 3-4 minutes until softened.
  3. In a large mixing bowl, add ground chicken, cooled onion and garlic, breadcrumbs, milk, parmesan, egg, parsley, Italian seasoning, and salt. Mix gently.
  4. Form about two-thirds of the mixture into a loaf shape on the prepared baking sheet, creating a well in the center.
  5. Fill the well with mozzarella, cover completely with remaining meat mixture, sealing well.
  6. Spread marinara sauce over the top of the meatloaf.
  7. Bake for 45 minutes until golden brown and a thermometer reads 74°C (165°F).
  8. Prepare crunchy topping by mixing panko breadcrumbs, parmesan, melted butter, and parsley.
  9. After 45 minutes, sprinkle topping and a light layer of mozzarella over the meatloaf and return to oven for 15-20 minutes.
  10. Let meatloaf rest for 10 minutes before slicing to reveal the mozzarella center.
