- Mix together the brown sugar, paprika, onion powder, garlic powder, cumin, mustard powder, salt, and black pepper in a bowl for the rub. Coat the beef brisket generously with this mixture and refrigerate for at least 30 minutes.
- In the slow cooker, combine minced garlic, apple cider vinegar, ketchup, brown sugar, Worcestershire sauce, and cayenne pepper to create BBQ sauce. Stir well and place the seasoned brisket in the sauce.
- Cover and cook on low for 8 to 10 hours until meat is fork-tender.
- Remove the brisket, add the cooking liquid to a saucepan, and simmer for 10–15 minutes until it thickens.
- Preheat oven to 200°C (390°F). Drizzle olive oil over the brisket, place on a baking sheet, and roast for 15 minutes. Baste with thickened BBQ sauce and roast for another 5 to 10 minutes.
- Let the brisket rest for a few minutes, then slice thinly against the grain and serve with BBQ sauce.
