For the Sauce

  • 1 teaspoon Fish Sauce Use sparingly
  • 1 tablespoon Packed Brown Sugar Coconut sugar can also be used
  • 1/4 cup Vegetable Oil Use other mild oils if needed
  • 1 tablespoon Sesame Oil

Method
 

  1. Step 1: Prep Peanuts and Garlic - Add the dry roasted peanuts and fresh garlic cloves into your food processor. Pulse until finely chopped.
  2. Step 2: Combine Ingredients - Add the Thai basil leaves, hot pepper, and green onions, and pulse until blended.
  3. Step 3: Mix Additional Ingredients - Add the oyster sauce, soy sauce, fish sauce, and packed brown sugar and pulse until incorporated.
  4. Step 4: Mix Oils - Slowly drizzle in the vegetable oil while the processor is running, followed by sesame oil until smooth.
  5. Step 5: Check Texture and Season - Check the texture; add more oil if too thick to achieve desired consistency.
  6. Step 6: Serve - Transfer the pesto to a bowl and serve immediately with rice noodles or grilled chicken.
