- Begin by peeling and dicing the pear into small cubes. Toss the diced pear with freshly squeezed lemon juice to prevent it from browning.
- In a medium skillet, heat over medium heat and add the diced pancetta. Sauté for about 5-7 minutes until it's crispy and golden brown.
- Remove excess fat from the skillet, leaving about 3 tablespoons for flavor. Add thinly sliced shallots to the skillet, sautéing them for about 1 minute until they start to soften.
- Next, introduce the frozen peas and prepared diced pears into the skillet. Stir everything together gently and cook for about 5 minutes.
